Ok this ROTM is something that is so simple I feel like I can't even take credit for calling it mine. In May, my angel boyfriend got me a food processor as a gift for our one year (aw). I decided to make salsa as one of the first things I did with it. So, using the internet I looked up best methods and found one that makes, IMO (in my opinion), the best type. It is also the only youtube video I watched.

But basically you can use a blender or food processor, I like using the food processor, but whatever you have!
So differing from Arnie's salsa, I add shallots, a lot of garlic and more onion. I also have liked to experiment with different peppers when I can get my hands on them.
Ingredients:
4-5 Tomatoes from the vine
1 Can dices tomatoes
4-5 Cloves of garlic
1 Shallot
1 White onion
1-2 Chipotle peppers in adobo
1 Jalapeno
1 Long hot
1 Poblano pepper
1 Cubanelle pepper
salt
Steps:
Cut 2 of the tomatoes roughly (I just cut it into 4s), add to food processor with half the can of tomatoes, 2-3 cloves of garlic, 1 chipotle pepper, 1/2 the shallot, and maybe 1/3 of each pepper cut roughly. (NOTE: you may want to take some of the seeds out depending on the heat you're looking to have! So I would be SUPER mindful of that when adding) Add a bunch of salt, I'd say at least a tablespoon and turn on the motor to blend to a liquid-y consistency.
Cut the rest of the remaining veggies roughly (tomatoes, diced tomatoes, garlic, shallot, onion, peppers) add to blender/food processor and pulse until everything is fully mixed together. Add more salt as desired. Sometimes I don't end up even using all the peppers because I already feel like I may have enough heat, or I will cut out the seeds. You don't want to leave the motor on so the salsa can have some more texture to it... unless you want it watery feel free to blend all the way through.
This recipe is whatever you want to make it so this is just a framework/method. Some people roast their veggies or char them, maybe roasted garlic would be pretty good in there tooooo! Oh I may have to try that, I am a garlic girl through and through.
It really is what you want in it. Always a great go-to to bring to your next party and when you want to get a lot of compliments!! I know I do. ;)
